Context

Mondeju is a special product of the towns of Tolosaldea and Goierri that are located in Aralar Natural Park. Amezketa is next to Aralar and has a strong connection to the mountain, where in addition to livestock, sheep herding has also been a major presence. The shepherds spend the summer in Aralar and come down at the end of September. Then they remove the sterile and old sheep from the flock, and to make use of them, mondejus and stewed sheep are often made. That is the origin of mondejus, a culture that has been shared from generation to generation, in other villages in the area of Amezketa and Aralar. Mondeju is a special product, made mainly with sheep products and leeks. The recipe has been kept in the kitchens of the farmhouses and the mondeju meal (mondeju jana) has been a reason for family unity, the fruit above all of the work of mothers and grandmothers. The transmission has taken place in the farmhouses, and in recent decades, the bars in Amezketa have extended it to a wider audience, where the work done by the Ugarte bar is worth noting. Almost, we can say, that Ugarte is known for the mondeju.

To care for this product and protect the culture that surrounds it, we have organized a mondeju and wine fair.
